A pre-dinner drink for relaxing , socializing and enjoying a glass of vino with a few nibbles, sounds like happy housr! The aperitivo is a time-honored ritual, a drink in the early evening to sit and unwind, and enjoy the atmosphere of good company. It’s also said to stimulate the appetite for the upcoming meal.
The tradition is more often founs in the north, where it was in the vogue in the 1900’s in elegant bars in the cities like Torino, Genoa, Firenze, Venice and Rome. It’s now spread around the country.

The sauvignon grape variety is difficult due to it's nature and the grapges are usually strong and green, forcing the winemaker to use controlled, low temperature processing and a small amount of the grape must remain on the skins to guarantee that the wine will have the typical, varietal organoleptic characteristics.

Excellent with fish starters, cured ham and speck, and with first courses served with seasonal vegetable sauces.
Falanghina IGT - 12% vol

Excellent mouth entry and thereafter pleasantly pungent continuous warmth sensation, followed by an interesting acid-salted note of light tannins. Excellent is the remaining sensation in the mouth after swallowing.

The grapes are carefully sorted in the vineyards and only healthy ripe clusters are harvested and put in single layer wooden crates or bamboo frames. This procedure allows the air to circulate and prevent the crushing of the grapes. The so arranged clusters are then placed in winery drying cellars, these perfectly ventilated places, in order to ensure their best preservation.
Brunello di Montalcino DOCG - 14% vol
Hand harvested, selection prior to pressing. Maceration and fermation for 20/25 days in temperature controlled stainless steel tanks (26/28°C) 60% aged for 30/36 months in French oak barriques (225 I) and the remaining 40% in oak casks (10/30 hl) and bottle aged for at least 18 months.
